It comes to a point that when the frozen bananas start falling out of your freezer and landing on your feet, you have to make up your mind and do something with them!
I was on a bit of a cooking roll after making cookies and meatballs for this weekend’s volleyball fundraiser. With the way our schedules have been going lately, we seem to be grabbing food on the go and I’m not taking the time to make the extra effort to have a few good homemade items in the house for the kids to snack on.
So, I guess that’s how I ended up making Banana Chip Muffins this morning.
In the midst of returning emails, finishing House of Cards, checking on a child who stayed home sick from school and catching up on a bit of social media…I began mashing a half-dozen frozen bananas that had been living in my freezer since I hid them from the fruit flies some time ago.
It honestly took no time at all…ten minutes max to throw it all together and clean up the dishes…and Spiderman was delighted to see fresh-baked treats when he popped in at lunch…enough that when he left, I discovered I was down four whole muffins!
If you’re short on time and have a few spotted bananas around or, like me, a freezer full just waiting for you to use them up, give this recipe a try!
I’m hoping my kids will grab them as snacks on their way to school in the morning…that is, if they’re not all gone by tonight!
Banana Chip Muffins
Ingredients:
1 3/4 cups Flour
1/2 cup Sugar
1 TB Baking powder
1/2 tsp Salt
3/4 cup Semi-sweet Chocolate Chips
1 Egg
1/4 cup Vegetable Oil
1/4 cup Milk
3 medium Mashed Bananas
Instructions:
1. Measure out the flour, sugar, baking powder, salt and chocolate chips in a bowl and make a well in the center.
2. In a second bowl, beat the egg until frothy, add in the oil, milk and mashed banana and mix.
3. Pour the mixture into the flour well and stir only enough until the flour is all blended in.
4. Fill greased muffin cups and bake in a 400 degree oven for 20 minutes.
